Eggplants may range in size from about 2 inches long to over 10 pounds; they are green, white, purple, yellow, orange, red, black, or striped in various patterns. Eggplants have a mild flavor similar to cucumbers and zucchini. The flesh is firm and juicy (sometimes called “melting”), often with small seeds inside. Eggplants are a good source of vitamins A and C, fiber, iron, vitamin B6, folate, manganese, copper, and potassium.
